French Toast with Hidden Veg

French Toast is a treat, there is no doubt about that. By why not contribute to your 5 serves of veg for the day while also having a treat! This recipe is a go-to favourite at home, for me and my kids. Oh, and it's super quick and easy.

Ingredients

2 Orange Veg Blocks

1 egg

2 tablespoons of maple syrup

½ teaspoon of vanilla essence

1 teaspoon of ground cinnamon

5 slices of bread

Olive oil or butter for cooking
Directions
Defrost the Veg Blocks for 90 seconds in the microwave on high.
Add all other ingredients into the same bowl and mix well with a fork or whisk.
Heat a frypan on medium heat with the butter or olive oil. When hot (but not smoking) dip the bread into the wet mixture. Ensure the bread is well covered, but not soaked through.
Place the bread into the hot frypan. Cook until brown, approx. 3 mins, on the first side and then flip.
Serve hot, and with more maple syrup!
