Like a lot of my recipes, I started researching healthy pancakes when I first had kids. Now I won't go back! These are fluffy little gems that will satisfy you at any stage of life.
A couple of points depending on your perspective:
For babies less than 12 months don't use honey. Really, you can avoid adding any sweetener (such as maple syrup), just use the fruit and they'll still love it.
Fitness enthusiasts: use this as a high protein treat. Replace 1/4 cup of oats for a scoop of protein powder and enjoy a high protein tasty treat!

Ingredients

2 Orange Veg Blocks*

¾ cup of oats (whole or rolled)

1 cup of milk or water (you will need to add more water once you start cooking as the oats soak up the liquid)

½ medium ripe banana, or 1 small banana

1 egg

1 teaspoon baking powder

1 teaspoon vanilla extract

2 tablespoons of Extra Virgin Olive Oil

2 tablespoons honey (or maple syrup)

1 teaspoon ground cinnamon

Pinch of salt

Detailed Instructions
Defrost the Veg Blocks in the microwave for 60 seconds (doesn’t matter if they're not fully defrosted).
Place the pancake pan on a medium heat on the stove.
Place all ingredients in your blender and blend until smooth (approx. 90 seconds in a Nutribullet). Remove blades and scrape us much batter from the blades back into the vessel as possible.
When the pan is warm, pour small dollops onto the pan. Shake the pan to spread out the pancakes so they’re not too thick. Flip when small bubbles start to appear on the top. Cook for a further approx. 90 seconds (you will need to test a couple at first to get the right cook time once flipped).
Serve as is, or with extra fruit and/or honey.

Heat the pan and pour in the mixture to cook

Recipe Note
There is a fair bit of flexibility in this recipe - measurements don't need to be too precise. It's also just a good recipe for getting started with flourless pancakes. I suggest playing with the following:
- Swap out some oats for some nuts or seeds (I recommend replacing no more than ¼ of the oats)
- See how many Veg Blocks you can add before you can taste the veg!
- Replace banana with other fruit such as blueberries, apple, kiwi (don't peel it the fruit, you won't even notice once it's blended).
* Replace with Beige Blocks for to keep a more standard pancake colour.
