Hello comfort in a bowl! A rich, flavour-packed, super easy to make, soup that’s ready in less than 10 minutes. Bursting with veggie goodness, this soup proves that fast can still mean delicious. Whether you're short on time or craving something cozy and healthy, this quick creation will warm you up and fuel your day. Serve it with crusty bread, and for me, I love a smear of blue-vein cheese for extra rich flavour!

Ingredients

2 Veg Blocks (Orange)*

⅓ diced onion

1 clove of crushed garlic

Dash of white wine

350mL mushroom stock**

1 large mushroom, diced small
-
Parsley to garnish
Directions
Heat a small saucepan over medium heat. Saute the onion and garlic until brown.
Add the white wine and reduce until nearly zero liquid is left.
Add the remaining ingredients and bring to simmering temp. Simmer for 1-2 mins.
Serve with crusty bread and enjoy!
Recipe Note
*You can replace the Orange Blocks with Rainbow for the most similar flavour. However, feel free to replace with any colour Veg Blocks for a different flavoured soup!
**We recommend using mushroom stock for the deep flavour. But you can use other stock if preferred. We recommend using either homemade stock, or for a supermarket option, use Campbells salt reduced stock.
