Serve this with some rice, couscous or polenta, some veg on the side, and a refreshing salad. Enjoy!
Ingredients
-
1kg of chicken thights, breast or tenderloins
Marinade
-
5 Orange Veg Blocks (or any of your choice*)
-
1 teaspoon of Extra Virgin Olive Oil
-
1 tablespoon of pure sesame oil
-
1½ tablespoons of dark soy sauce
-
2 crushed cloves of garlic
-
2 teaspoons of honey**
-
1 teaspoon of fresh or dried herbs of choice (oregano or thyme suggested)
-
½ teaspoon of cracked pepper
Directions
Detailed Instructions
Defrost the Veg Blocks in the microwave for approx. 75 seconds, using a microwavable bowl. Ensure they're fully defrosted, but not too hot.
Scrap the defrosted Veg Blocks into the large mixing bowl.
Add all other marinade ingredients into the large mixing bowl. Stir through.
Add the chicken into the marinade and stir through. Ensure all pieces of chicken are thoroughly covered in the marinade (this is best achieved by getting your hands into it and massaging it all through….but you can use a spoon too if you prefer).
Cover and let sit for at least 30 mins before cooking (place in the fridge if resting for more than 1 hour).
When ready, heat the frypan on medium-high heat. Once hot, add the chicken (no need to add any oil to cook). For chicken thighs, leave cooking for approx. 10 mins before turning. Turn, then cook for the final 5 mins (note: this cook time will vary based on pan heat and the thickness of the chicken. Make sure the chicken is cooked through before serving).
Serve with rice/cous cous/polenta, cooked veg, and salad.
Simple Instructions
Defrost the Veg Blocks.
Add all marinade ingredients into the mixing bowl and mix well.
Add the chicken to the marinade. Let sit for at least 30 mins.
Cook the chicken in a fry pan or oven bake.
Serve with rice/cous cous/polenta, cooked veg, and salad.
Recipe Note
*Any flavour blocks will work. For a sweeter flavour, go with the Orange or Red Blocks. But really, the rest of the ingredients will mask the veg flavour.
**If you’re cooking for someone allergic to honey, replace this with maple syrup.
This recipe gives you the meat and marinade part of the meal. Be sure to serve it with some other goodies - rice/couscous/polenta, cooked veg on the side, and maybe a green salad if you're feeling keen.
