When my wife and I first visited Porto (in Portugal) back in 2019, I absolutely fell in love with their cuisine! The Portuguese seafood dishes were absolutely delicious. It was at, what looked like just a regular food court, we had fish soup with potato and spinach. It was a super simple dish that was nourishing and satisfying in every way. After returning home I had a craving for a touch of Porto. That was the origin of this recipe. While it may not be an authentic Portuguese fish soup recipe - we still love it, and I'm sure you will too!
Portuguese Style Fish Soup

Ingredients

1 medium onion, roughly diced

4 cloves of garlic, crushed

3-5 anchovies, roughly chopped
-
200mL white cooking wine
-
1L liquid vegetable stock*
-
300mL water
-
400g frozen white fish fillets, skinless*, cut into 5cm strips.

3 medium potatoes, chopped in 3cm pieces
-
200g frozen chopped spinach*
-
½ cup of fresh parsley, chopped
-
½ fresh lemon, juice
-
4 Green Veg Blocks
-
Extra Virgin Olive Oil – drizzle
Directions
Sauté the onion and garlic in a large saucepan.
Add the anchovies and cook for 1 min, or until they have broken down into tiny pieces.
Add the white wine and reduce the amount of liquid until approx. only a quarter of the liquid remains.
Add the vegetable stock, water and potatoes. Bring to the boil and then simmer for 40 minutes.
Add the frozen fish pieces, spinach and Veg Blocks. Bring back to the boil and simmer for 3 minutes. Check a piece of fish to ensure it is cooked through.
Turn the heat off. Add the parsley and drizzle some olive oil. Add the lemon juice. Stir through and then serve!
Recipe Note
Liquid stock - as a supermarket option, use Campbells reduced salt vegetable stock.
Fish - Whiting is my favourite to use. But feel free to use your favourite fish.
Spinach - of course you can use fresh spinach if you prefer 😊
