Ingredients: 1 medium onion, roughly diced; 4 cloves of garlic, crushed; 3-5 anchovies, roughly chopped; 200mL white cooking wine; 1L liquid vegetable stock*; 300mL water; 400g frozen white fish fillets, skinless*, cut into 5cm strips.; 3 medium potatoes, chopped in 3cm pieces; 200g frozen chopped spinach*; ½ cup of fresh parsley, chopped; ½ fresh lemon, juice; 4 Green Veg Blocks; Extra Virgin Olive Oil – drizzle

When my wife and I first visited Porto (in Portugal) back in 2019, I absolutely fell in love with their cuisine! The Portuguese seafood dishes were absolutely delicious. It was at, what looked like just a regular food court, we had fish soup with potato and spinach. It was a super simple dish that was nourishing and satisfying in every way. After returning home I had a craving for a touch of Porto. That was the origin of this recipe. While it may not be an authentic Portuguese fish soup recipe - we still love it, and I'm sure you will too!
